This old fashioned hamburger casserole is perfect for a simple family dinner or get-together with friends. Itโs easy to make and everyone will love it! The ground beef and pasta make it easy to stretch your menu budget while still making sure everyone leaves the dinner table satisfied.
The best part is, you can customize it however you want. Add your favorite vegetables or switch up the meat. No matter what, it will always taste amazing.
If you want something lighter, then this tomato turkey pasta casserole is another great choice that is similar but uses lean ground turkey instead of beef.
What Goes with Old Fashioned Hamburger Casserole?
Old fashioned hamburger casserole is best served with a side of vegetables and of course a dinner roll. I love serving with veggies like a green bean casserole, asparagus casserole, or roasted Brussels sprouts. Roasted carrots or mashed potatoes are also a great option.
For the dinner roll, I like to get a little creative. If Iโm feeling fancy, Iโll make homemade rolls. But most of the time, I just grab a can of crescent rolls or some pre-made dough from the grocery store.
Ingredients
- 1 tablespoon olive oil (15ml)
- 1 medium white onion
- 1 pound ground beef (500 g)
- 1 teaspoon salt (6g)
- 1 teaspoon black pepper (3g)
- 1 teaspoon garlic powder (2g)
- 3 cups tomato sauce (750ml)
- 7 oz dry elbow macaroni (200g)
- 1 cup sour cream (240g)
- 1 cup cream cheese (225g)
- 1 cup shredded cheddar cheese (113g)
Note: For extra flavor, you can replace the tomato sauce with a homemade marinara sauce.

How to Make Old Fashioned Hamburger Casserole

Start by preheating the oven to 350ยฐF/180ยฐC then prepare your baking dish with non-stick spray. I recommend a larger pan such as a 10" oval or 9"x13" baking dish. Set this aside.
Cook the elbow macaroni for ยฝ the time suggested then remove from the water and drain and set it aside for later.
In a large skillet, heat the olive oil over medium. Add in the chopped onions, and cook them for 2 to 3 minutes, stirring them regularly.
Once the onions are tender, add in the ground beef. Cook this for 8 to 10 minutes, breaking it up as it cooks. When the beef is cooked and no longer pink, drain off any excess grease, then season with salt, black pepper, and garlic powder or dried garlic flakes.
Pour the tomato sauce into the skillet with the meat, reduce the heat to low, and continue cooking until it bubbles.
Once the sauce begins to bubble, add in the sour cream and cream cheese, stirring it until a creamy meat sauce is combined.
Add the drained par-cooked pasta to this meat sauce and stir to combine and coat the pasta.
Pour this pasta and meat mixture into the prepared baking dish then top it with 1 cup of shredded cheddar (or preferred cheese).
Bake for 25 minutes, or until the cheese has melted and the casserole is heated through.

Can I Make This Hamburger Casserole with Other Ground Meats?
Ground meats are easily swapped for one another with very little effort. I am using ground beef but ground chicken, turkey or pork can also be used. You can use each one separately or you can use a combination of them all.
Another idea is to use ground lamb. This will add a nice flavor to the meal. Other ideas for ground meats are chorizo, Italian sausage, and breakfast sausage. If you have it on hand, you can also use ground deer/venison.
What Pasta Goes in Hamburger Casserole?
When making this hamburger casserole, you want to use a small pasta. I like to use elbow macaroni as my first choice. You could also use penne, shells, or even rotini.
If you want to use a different pasta, thatโs fine too. Just make sure itโs a small pasta so it will fit well in the casserole dish. For a baked spaghetti-style dish, you can add spaghetti noodles and a bit of Italian seasoning into the sauce.
Can I Freeze Hamburger Casserole?
I love make-ahead meals and this one is no exception. This casserole can be made ahead of time and then frozen. I like to make it in two 8ร8 casserole dishes so I can freeze one for later. When youโre ready to eat it, just thaw it overnight in the refrigerator and then bake it according to the recipe instructions.
To freeze this hamburger casserole, after it has been baked, wait for the casserole to cool completely. I like to portion the leftovers into smaller containers or freezer bags so they are the size of individual meals. This makes it easy to bring out a portion for dinner or lunch for one person without having to thaw the whole batch.
The casserole will last for about 3 months in the freezer. Make sure that you date and label the food before freezing so you know when it needs to be rotated to use soon.

Notes
For more texture you can use 1 cup diced tomatoes in place of 1 cup of the tomato sauce.
