This Taco Pie Recipe is a favorite in my house because of it's layers of seasoned ground beef, gooey cheese, and soft tortillas, all baked to perfection. Ingredients
  

  • olive oil for frying
  • 500 g 1 pound ground beef
  • 1 red onion chopped
  • 2 garlic cloves minced
  • 2 tablespoon taco seasoning
  • ¼ cup chicken stock
  • ⅔ cup canned corn
  • ⅔ cup mild salsa
  • 2 tablespoon tomato paste
  • 5-6 tortillas
  • 1 ½ cup mixed cheese
  • sliced scallions
  • chopped tomatoes
  • sour cream
  • avocado
  • sliced black olives

Instructions
 

  • Preheat the oven to 180C/350F.
  • In a large pan, heat up olive oil and saute chopped onions for 5 minutes. Add ground beef and cook for 10 minutes more. Drain excess liquid and season meat with salt, taco seasoning and garlic, stir in tomato paste and cook for 1 minute.
