  • 3 tablespoon olive oil
  • 1 medium white onion chopped
  • 1 bell pepper chopped
  • 2 tablespoon brown sugar
  • 1 tablespoon salt
  • 1 teaspoon smoked paprika
  • 400 g 14 oz frozen corn
  • ½ cup corn flour
  • 3 eggs
  • 1 ¼ cup milk
  • ½ cup full-fat cream
  • 1 cup cheddar cheese shredded

Instructions
 

  • Preheat the oven to 180C/350F.
  • In a medium cast iron skillet, placed over medium-high heat, heat up olive oil and saute peppers and onions for 5-7 minutes. Season with salt, sugar and paprika, stir well, add corn and cook for 3 minutes. Remove from heat.
