  • 3 tablespoon olive oil
  • 1 medium white onion chopped
  • 3 garlic cloves minced
  • 300 g 10 oz frozen spinach, thawed, dried
  • 3 cups cooked long-grain rice
  • ⅔ cup feta cheese cut into cubes
  • 4 eggs
  • ½ cup sour cream
  • ½ cup cream cheese
  • zest of 1 lemon

Instructions
 

  • Preheat the oven to 200C/400F.
  • Heat olive oil in a cast iron skillet. Saute onions for 5 minutes. Add spinach and stir well, season with salt and pepper, stir in garlic and lemon zest.
