The Spinach Artichoke Breakfast Casserole is a hearty, nutritious dish that combines the classic flavors of spinach and artichokes with eggs, cheese, and spices - perfect for a breakfast, bunch or even a breakfast-for-dinner. The kids even love when I plunk this down on the table, with plenty of sour cream for garnish!

Ingredients
  

  • ½ white onion chopped
  • 2 garlic cloves minced
  • 8 eggs
  • 1 can artichokes cut into quarters
  • 150 g 5 oz defrosted spinach, thawed
  • ¼ cup milk
  • ¼ cup parmesan cheese
  • 1 tablespoon mustard
  • ½ teaspoon thyme
  • ⅔ cup mozzarella shredded

Instructions
 

  • Preheat the oven to 180C/350F.
  • In a large skillet saute onions with olive oil for 5-7 minutes. Stir in spinach, season with salt and pepper. Add garlic, stir for 30 seconds more, then add in artichokes and remove from heat.

  • Transfer the filling into a casserole dish.
  • In a large bowl whisk eggs with milk, salt, pepper, mustard, thyme and parmesan.
