Fold-Over Tortilla Bake has become a cherished favorite in my household. A rich dish that's inspired by Tex-Mex quesadillas and serves the cheesy-rich experience that everyone enjoys!

Ingredients
  

  • ½ cup canned corn
  • 500 g 1 pound ground beef
  • 1 onion chopped
  • 2 garlic cloves minced
  • 3 tablespoon tomato paste
  • 400 g 14 oz canned tomatoes
  • 1 cup enchilada sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon cilantro
  • 8-10 tortillas
  • 1 cup herbed cream cheese
  • ¼ cup jalapenos chopped
  • 1 cup sharp cheddar cheese separated

Instructions
 

  • Preheat the oven 180C/350F.
  • Heat a few tablespoons of olive oil in a medium pan. Saute onions for 5 minutes. Add ground beef and cook for 5 minutes. Drain excess liquid if needed.
