Fold-Over Tortilla Bake has become a cherished favorite in my household. A rich dish that's inspired by Tex-Mex quesadillas and serves the cheesy-rich experience that everyone enjoys!
Heat a few tablespoons of olive oil in a medium pan. Saute onions for 5 minutes. Add ground beef and cook for 5 minutes. Drain excess liquid if needed.
1 onion, 500 g 1 pound ground beef
Mix beef with spices, corn, garlic, tomato paste and salt. Pour in tomatoes and enchilada sauce.
½ cup canned corn, 2 garlic cloves, 3 tablespoon tomato paste, 400 g 14 oz canned tomatoes, 1 teaspoon ground cumin, 1 teaspoon salt, 1 teaspoon cilantro, 1 cup enchilada sauce
Spread some cream cheese on top of each tortilla and fold as shown on the video.
8-10 tortillas, 1 cup herbed cream cheese
Pour ⅔ of the sauce and layer tortillas on top. Add remaining sauce on top. Bake for 15 minutes, add cheese and bake for 5 minutes more.
