  • olive oil for cooking
  • 1 ½ cup chicken stock
  • 300 ml 10 oz tomato sauce
  • 3 tablespoon tomato paste
  • 2 tablespoon chipotle peppers paste
  • 1 teaspoon ground cumin
  • 2 garlic cloves minced
  • 1 bell pepper chopped
  • ½ red onion chopped
  • 300 g 10 oz cooked black beans
  • 1 cup brown rice
  • fresh cilantro
  • chopped avocado
  • chipotle mayonnaise

Instructions
 

  • Preheat the oven to 200C/400F.
  • In a large pan heat up 2-3 tablespoon of olive oil over the medium heat. Add peppers and onions. Cook, stirring, for 5-7 minutes.

  • Transfer casserole mixture into the baking pan and pour chicken stock on top. Wrap the pan in foil and bake for 90 minutes. Let stand covered for 10 minutes, then remove the foil, drizzle with mayo, top with cilantro and avocado, then serve.
