Stuffed Mushroom Casserole

The Stuffed Mushroom Casserole is a delightful dish that combines earthy mushrooms with creamy cheese and crunchy breadcrumbs. Makes a great side dish or even a main for a vegetarian meal.

Ingredients
  

  • 750 g 1 ½ pounds cremini mushrooms
  • 3 garlic cloves minced
  • 2 thyme sprigs
  • 150 g 5 oz cream cheese
  • 1 cup panko breadcrumbs
  • ½ cup shredded parmesan
  • 3 tablespoon butter
  • ⅔ cup mozzarella shredded
  • 1 onion diced

Instructions
 

  • Preheat the oven to 190C/375F.
  • Saute onions in some olive oil until slightly golden, around 5 minutes.

  • Add mushrooms and cook for 10 minutes or until all of the moisture has fully evaporated and the mushrooms become golden (do not overcrowd the pan).
