750 g 1 ½ pounds cremini mushrooms 3 garlic cloves minced 2 thyme sprigs 150 g 5 oz cream cheese 1 cup panko breadcrumbs ½ cup shredded parmesan 3 tablespoon butter ⅔ cup mozzarella shredded 1 onion diced
Preheat the oven to 190C/375F.
Saute onions in some olive oil until slightly golden, around 5 minutes.
Add mushrooms and cook for 10 minutes or until all of the moisture has fully evaporated and the mushrooms become golden (do not overcrowd the pan).
750 g 1 ½ pounds cremini mushrooms
Season with salt and pepper, add thyme leaves and garlic, stir for 30 seconds.
2 thyme sprigs, 3 garlic cloves
In a large bowl combine mushrooms with cream cheese, half of the parmesan and half of the breadcrumbs.
150 g 5 oz cream cheese, ½ cup shredded parmesan, 1 cup panko breadcrumbs
Transfer mushroom filling into a baking pan. Top with mozzarella.
⅔ cup mozzarella
In a separate bowl mix breadcrumbs with melted butter and parmesan. Sprinkle on top of the casserole.
3 tablespoon butter
Bake for 25 minutes.
