- 1 loaf vegan brioche (350g)
- 1 โ cup coconut milk (315ml)
- ยผ cup packed brown sugar (50g)
- 2 tablespoons cornstarch (7.5g)
- 1 teaspoon ground cinnamon (3g)

- โ cup sliced almonds (24g)
- 2 tablespoons plant-based butter substitute (29g)

Note: If you want to go with a more traditional brioche but still remain vegan, you may want to make your own buttery vegan brioche instead of buying in a market.

How to Make a Vegan French Toast Casserole

Start by preparing your baking dish with non-stick spray or by greasing it with vegan butter. This recipe works best in a 10" oval baking dish or a 9"x13" baking dish. You will also want to go ahead and preheat your oven to 350ยฐF/180ยฐC.
Now, cut the bread into 1" cubes and spread them evenly over the bottom of the prepared baking dish. I used vegan brioche, but you can use any preferred bread or vegan roll (cinnamon rolls, raisin bread, and brioche are best for flavor).
Now, whisk the coconut milk, brown sugar, cinnamon, and cornstarch together in a large bowl until incorporated and the sugar is mostly dissolved.
In a separate bowl, you will combine the vegan butter, flour, and salt to form a crumble. A fork or pastry blender works great for this and makes it pea-sized as needed.
Now, cover the bread in the baking dish with the coconut milk mixture so that every piece is soaked in the liquid.
Then, sprinkle the crumble over the top of the bread along with the sliced almonds.
Bake for 30 to 35 minutes. You want the bread to be set and while it can be moist, you want it to mostly be set so the sauce is soaked into the bread and the bread is crisping on top.
Serve hot with your favorite toppings.

- Serve with a sprinkle of powdered sugar, maple syrup, and fresh fruit.
Notes
This can be made with any vegan bread, but is best with a sweeter bread when possible.
