  • 3 tablespoon olive oil
  • 1 red onion sliced
  • 4 garlic cloves minced
  • 500 g 1 pound pork sausages
  • 6 large eggs
  • ½ cup milk
  • salt and pepper
  • 9 frozen hash browns
  • 1 cup mozzarella shredded
  • 3 thyme sprigs leaves only

  • Pre-cook hash browns for 10 minutes at 190C/375F.

  • In a cast iron skillet, heat up some olive oil and cook sliced onions for 7 minutes. Add sausages and cook for 10 minutes or until fully done. Season with garlic and thyme. Transfer into a baking dish and sprinkle with ½ of the mozzarella.
