In a cast iron skillet, heat up some olive oil and cook sliced onions for 7 minutes. Add sausages and cook for 10 minutes or until fully done. Season with garlic and thyme. Transfer into a baking dish and sprinkle with ½ of the mozzarella.
3 tablespoon olive oil, 1 red onion, 4 garlic cloves, 500 g 1 pound pork sausages, 3 thyme sprigs, 1 cup mozzarella
Whisk eggs with milk, salt and pepper. Pour egg mixture on top of the sausages, sprinkle another ½ cup of cheese on top. Place hash browns on top of the casserole. Bake for 40 minutes.
