  • 3 tablespoon olive oil
  • 6-8 chicken thighs
  • ½ medium red onion sliced
  • 1 medium red bell pepper sliced
  • 3 garlic cloves minced
  • ⅔ cup green olives
  • 2 tablespoon capers
  • 1 lemon zest and juice
  • 1 teaspoon dry or fresh thyme
  • 2 anchovies pureed
  • 3 garlic cloves minced
  • 2 tablespoon olive oil
  • ½ cup cashews

Instructions
 

  • Preheat the oven to 190C/375F.
  • Season chicken with salt and pepper on both sides.
    6-8 chicken thighs, 3 tablespoon olive oil
  • Brown chicken in a cast iron skillet placed over medium heat until browned on both sides (make sure to not touch it too often).

  • Remove chicken onto a separate plate and add peppers and onions into the skillet. Cook for 5 minutes, then mix in garlic, olives, capers, lime juice and zest, season with salt, pepper and dry thyme.
