- 1 red onion
- 14 oz creamed spinach (400g)
- ยฝ cup milk (120ml)
- 1 ยฝ teaspoon salt (9g)
- 1 teaspoon black pepper (3g)
- ยผ teaspoon nutmeg (1.5g)
- 1 cup shredded cheddar cheese (235g)
- 6 large eggs
- 6 slices of cooked bacon
- 1 large sheet puff pastry
- 1 tablespoon water (15ml)

How to make a Puff Pastry Bacon and Egg Casserole

Before you begin, you will need to cook the bacon, drain it, crumble it then set it aside. This is great for leftovers from another breakfast. Then, you will want to preheat the oven to 350ยฐF/180ยฐC.
Spray the bottom of the baking dish with non-stick spray. I used a 9" square dish, but you can use a larger one if you prefer. Then, roll out the puff pastry, and cut it in half creating two squares. Place one of these squares into the base of the baking dish, then cut the other half into ยฝ" strips and set them aside.
Over medium heat, add the olive oil and onions to a large skillet and cook for 5 minutes, stirring regularly. They should be softened and just starting to brown.
Then, add in the creamed spinach. I used a frozen package that had been thawed and patted dry. You can use any you already made if desired. Then, stir it and the onions together.
Add in the milk, salt, black pepper, and ground nutmeg. Stir this all together until combined, then reduce the heat to low, and let it continue cooking for an additional 10-minutes. Stir regularly as it cooks.
Pour the cooked spinach mixture into a large bowl. I recommend letting it cool for 5 minutes, and then stir in the cheese and cooked chopped bacon. Now, add 5 of the eggs and stir until this is all combined well.
Pour this into the prepared baking dish.
Then top with the strips of puff pastry.
In a small bowl, whisk the remaining egg with 1 tablespoon of water, then brush it over the top of the puff pastry strips.
If desired, add quail egg yolks on top of the casserole as shown. Then, bake for 40 to 45 minutes until the egg is set in the center and the crust is golden brown.
Let it stand for at least 15 minutes before slicing it to serve.

I recommend freezing it after baking for the easiest preparation when ready to serve, however, you can freeze it just before the baking portion of the recipe. Just wrap it well with plastic wrap, then aluminum foil, label it, and date it. It stays fresh for up to 3 months in the freezer.
To prepare from frozen, let it thaw overnight in the refrigerator before placing into the oven and baking as directed in the recipe.
