⏲️Chef's Tip
Even the simplest recipes can benefit from a few expert tips. Here are some suggestions to ensure your crustless quiche turns out just right:
Blanching the Vegetables
Blanching the broccoli and cauliflower florets before baking helps to soften them slightly while retaining their vibrant color and crunch. Don't skip this step, as it ensures even cooking and prevents soggy vegetables.
Whisking the Egg Mixture
Take the time to whisk the eggs thoroughly with the Greek yogurt, mustard, and seasonings. This ensures a smooth, creamy consistency that will blend perfectly with the vegetables and cheese.
Cooling Before Slicing
Allow your quiche to cool completely before slicing. This helps the egg mixture set, making it easier to cut clean slices without the quiche falling apart.
