When you think of quiche, you might imagine a rich, buttery crust. Our crustless version, however, offers a lighter alternative without sacrificing flavor or texture. The combination of broccoli and cauliflower provides a satisfying crunch, while the creamy egg mixture binds everything together beautifully. The addition of Greek yogurt adds a tangy twist, and the cheeses bring a savory depth that will have you reaching for seconds.

🍽What Do I Serve With This Casserole Dish?

Pairing your crustless quiche with the right sides can elevate your meal to new heights. Here are a few ideas to complement your quiche and create a well-rounded dining experience:

Simple Green Salad

A fresh salad with mixed greens, cherry tomatoes, cucumber, and a light vinaigrette adds a refreshing contrast to the richness of the quiche. The crisp textures and vibrant flavors will complement the savory notes of the dish.

Roasted Vegetables

Roasted vegetables like carrots, bell peppers, and zucchini provide a warm, hearty side that pairs perfectly with the quiche. Their natural sweetness enhances the overall flavor profile.

Whole-Grain Bread

A slice of whole-grain bread or a crusty baguette can add a satisfying carb element to your meal. It's great for soaking up any leftover egg mixture and adds a comforting touch.

⏲️Chef's Tip

Even the simplest recipes can benefit from a few expert tips. Here are some suggestions to ensure your crustless quiche turns out just right:

Blanching the Vegetables

Blanching the broccoli and cauliflower florets before baking helps to soften them slightly while retaining their vibrant color and crunch. Don't skip this step, as it ensures even cooking and prevents soggy vegetables.

Whisking the Egg Mixture

Take the time to whisk the eggs thoroughly with the Greek yogurt, mustard, and seasonings. This ensures a smooth, creamy consistency that will blend perfectly with the vegetables and cheese.

Cooling Before Slicing

Allow your quiche to cool completely before slicing. This helps the egg mixture set, making it easier to cut clean slices without the quiche falling apart.
