- 2 tablespoons olive oil (30ml)
- 5 boneless skinless chicken thighs
- 2 teaspoon salt (12g)
- 1 onion chopped
- 1 teaspoon black pepper (2.5g)
- 7 oz cremini mushrooms (200g)

- 2 thyme springs
- 3 tablespoons all-purpose flour (23g)
- โ cup white wine (158ml)
- 1 cup milk (250ml)
- 2 cups chicken stock (500ml)
- 1 cup dry orzo or ditalini pasta (56g)

How to Make Chicken Fricassee Casserole

Start by preparing your baking dish. I like to use a 9" square or 10" baking dish for this. You can use a larger one if desired. Spray the bottom and sides with non-stick spray and then set it aside. This helps with cleanup later.
Now, preheat the oven to 375ยฐF/190ยฐC.
Drizzle the chicken thighs with 1 tablespoon olive oil on both sides, then sprinkle ยฝ of the salt and ยฝ of the black pepper over it, so both sides are seasoned.
Now, add the remaining 1 tablespoon of olive oil to the large skillet over medium-high heat. Add the chicken thighs and cook them for 2 to 3 minutes per side. Cook them just until browned on both sides, but not cooked through. Remove them from the pan and set them aside for now.
Then, into the same pan, add the onions. Reduce the heat to medium and cook them for about 5 minutes until they are lightly browned. Make sure you stir them regularly so they don't burn.
After 5-minutes, add in the sliced mushrooms and the rest of the salt and pepper. Cook the mushrooms for 8 to 10 minutes, or until they are softened, browned, and no more liquid remains.
Next, stir in the minced garlic, fresh thyme leaves, and all-purpose flour. Stir to coat the mushrooms and cook for another 30-seconds.
Then, pour in the wine, milk, and chicken stock. Stir it together until no lumps remain. Then, bring the mixture to a boil and cook for another 5-minutes.
After 5 minutes, the sauce should be thickened. Add in the 1 cup of uncooked pasta, and then pour this into the prepared baking dish.
Lay the chicken thighs on top of the mixture.
Then bake for 15 to 17 minutes or until the chicken is cooked through.
