What Do I Serve With Mexican Fiesta Casserole?
One of my favorite things about this recipe is that it truly is an all-in-one dish. It has starch, protein, and vegetables all together with a bit of cheese on top.
However, if you want to serve this as an entree with side dishes, I would recommend going with something like a side salad, roasted vegetable, or even a classic refried bean. Rice might be nice, but with the starch base, it might be a bit heavy. Of course, classic guacamole with chips is a personal favorite.
Ingredients
- 1 tablespoon olive oil (15ml)
- 10 ounces ground chicken (300g)
- 1 medium red onion
- 1 zucchini
- ยฝ red bell pepper
- 1 tablespoon taco seasoning (28g)
- ยฝ cup salsa (125g)
- ยฝ can chili beans (115g)
- 1 cup shredded cheddar cheese (83g)
- 1 cup Bisquick mix (120g)
- ยฝ cup buttermilk (120ml)
- 1 egg
Optional toppings for serving:
- Sour cream or plain Greek yogurt
- Hot sauce or additional salsa
- Chopped green onions, parsley, or fresh cilantro
- Lime wedges
- Guacamole

How to Make a Bisquick Chicken Casserole
Spray a 9"x13" baking dish with non-stick spray then set it aside. Then, preheat the oven to 350ยฐF/180ยฐC.
Now, heat the olive oil in a large skillet over medium heat. To the oil, add the chopped red onion, squash or zucchini, and bell pepper. Cook the vegetables, stirring regularly, for about 5 minutes, or until they have softened.
Now, add in the ground chicken and cook it for 8 to 10 minutes or until cooked through. Use a fork or spatula to break up the meat as it cooks.
Then, add the taco seasoning, beans in sauce, and salsa. Stir this together to combine. Taste and add additional spices if desired.
In a large bowl, whisk together the Bisquick, buttermilk, and egg until a smooth batter forms.
Now, pour that batter into the bottom of the prepared baking dish.
Top this with around ยผ cup of shredded cheese.
Then pour the meat and bean mixture over the top and spread it evenly over the top. Sprinkle the remaining cheese on top of the meat.
Bake for 30 minutes or until the cheese is melted and golden and the bottom layer is cooked through.

Want to save time in the kitchen? Buy ground meat in bulk and cook it all at once with just salt and pepper to season. Portion into 1 pound bags and freeze for up to 4 months. Then, you can just grab a bag and thaw to throw together with other ingredients to save time cooking when assembling a casserole. Yes. The Bisquick Mexican casserole can be frozen for up to 3 months. It can be frozen after it is baked as leftovers. Place it in a freezer-safe container. I like to freeze the leftovers in single-serving portions in freezer bags for convenience.
You can also make this and freeze it before baking. When you are ready to bake it, thaw it overnight in the refrigerator and then bake it according to the instructions below. If you are freezing this casserole as a premade freezer meal, I like to use a disposable casserole dish. This keeps my regular pans in circulation.
