- 1 pound ground beef (500g)
- 1 medium onion
- 7 large eggs
- 1 teaspoon salt (5g)
- 1 teaspoon black pepper (5g)
- 7 ounces sour cream (200g)
- ยฝ cup milk (120 ml)
- 1 ยฝ cups shredded cheddar cheese (180g)
- 4 cups frozen hash browns (600g)

How to Make a Gluten-Free Breakfast Casserole

Remove the hashbrowns from the freezer and let them thaw. Once thawed, you can pat them dry with paper towels to remove any excess water.
Then, preheat the oven to 350ยฐF/180ยฐC and spray the baking dish with non-stick spray. I recommend a 9" or larger dish for this recipe.
Set this aside, and add olive oil to the skillet. Over medium heat, add the onions and cook for 3 minutes, stirring them regularly.
Once the onions are tender, add in the ground beef. Cook this for 8 to 10 minutes, stirring it regularly and breaking up the meat as it cooks. Cook until it is no longer pink.
Drain off any excess grease or liquid from the meat, then add in the thawed hashbrowns. Stir this together and cook for another 3 to 4 minutes to heat everything through.
Now, spread this into the baking dish you prepared earlier.
In a large bowl, whisk together the eggs, milk, sour cream, salt, and black pepper until combined. Then, pour this over the top of the meat and potato mixture.
Sprinkle the top with shredded cheddar cheese then bake for 1 hour or until the eggs are cooked and set in the center.

If you have leftover chicken, that would be great in this as well. You could also use bacon, diced ham, or sausage. Just make sure to cook the meat before adding it to the casserole.
How Long Should I Bake Breakfast Casserole?
The bake time for this casserole will vary depending on how big of a dish you are using. I like to use a 9" or larger dish for this recipe, and it takes about 1 hour to bake. If you use using a larger dish, it will take less time to bake. Just keep an eye on it and remove it from the oven when the eggs are set and the top is golden brown.
