  • 2 tablespoon butter
  • 2 medium white onions sliced
  • 3 garlic cloves minced
  • ½ teaspoon turmeric
  • ½ teaspoon paprika
  • 1 teaspoon ground coriander
  • 2 teaspoon garam masala
  • 800 g 28 oz canned tomato puree
  • 2 tablespoon sugar
  • 1 teaspoon ground cumin
  • ⅓ cup sour cream
  • 5-6 eggs
  • cooked rice for serving
  • lime wedges for serving
  • cilantro for serving

Instructions
 

  • Preheat the oven to 190C/375F.
  • Place a cast iron skillet onto a medium heat and melt some butter in it. Cook onions in butter for 5 minutes. Add garlic, coriander and cumin, cook for 30 seconds.
