North Indian Baked Eggs are a delightful addition to any meal plan. They offer a burst of flavors, a plethora of health benefits, and are easy to prepare.
Place a cast iron skillet onto a medium heat and melt some butter in it. Cook onions in butter for 5 minutes. Add garlic, coriander and cumin, cook for 30 seconds.
2 tablespoon butter, 2 medium white onions, 3 garlic cloves, 1 teaspoon ground coriander, 1 teaspoon ground cumin
Mix in paprika, turmeric and garam masala. Pour canned tomatoes into the onion and spices mixture, cook for 7-10 minutes. Season with salt and sugar, mix in sour cream.

Crack eggs into the sauce and transfer the dish into the oven for 12 minutes.
5-6 eggs
Serve with some bread or on top of rice with cilantro and lime juice.
