Ingredients
  

  • 1 ½ chicken stock
  • 1 ¼ cup water
  • ⅔ cup grits
  • 2 eggs
  • 1 ½ cups cheese shredded
  • 3 tablespoon butter
  • 300 ml 10 fl.oz bechamel sauce
  • ⅔ cup mayonnaise
  • 2 teaspoon curry powder
  • 200 g 7 oz broccoli florets
  • 1 medium white onion chopped
  • ⅔ cup sweet potato peeled, cut into cubes
  • 2 garlic cloves minced
  • 2 cups roasted chicken chopped

Instructions
 

  • Preheat the oven to 190C/375F.
  • Heat up water and chicken stock over medium heat. Start slowly adding in grits and lower the heat. Cook, following packet instructions.

  • Melt butter over medium heat and cook onions for 5 minutes. Add sweet potato and broccoli, stir well. Mix in garlic, curry and add chicken. Transfer into the casserole pan.
