With its creamy grits, tender curried chicken, and perfectly cooked vegetables, Curried Chicken and Grits Casserole is a family favorite from my table to yours.
Heat up water and chicken stock over medium heat. Start slowly adding in grits and lower the heat. Cook, following packet instructions.
1 ½ chicken stock, 1 ¼ cup water, ⅔ cup grits
Whisk eggs with mayonnaise and bechamel sauce.
2 eggs, ⅔ cup mayonnaise, 300 ml 10 fl.oz bechamel sauce
Melt butter over medium heat and cook onions for 5 minutes. Add sweet potato and broccoli, stir well. Mix in garlic, curry and add chicken. Transfer into the casserole pan.
3 tablespoon butter, 2 teaspoon curry powder, 200 g 7 oz broccoli florets, 1 medium white onion, ⅔ cup sweet potato, 2 garlic cloves, 2 cups roasted chicken chopped
Mix grits with cheese and pour over the chicken and vegetables. Bake for 45-50 minutes.
