Our bagel breakfast casserole is an ideal option for those mornings when you don't have much time to prepare breakfast. The casserole is easy to assemble, requires minimal effort, and can be made the night before so it's ready to go in the morning. Ingredients
- 3 tablespoons olive oil (45ml)
- 4 plain bagels
- 6 large eggs
- 1 โ cup milk (395ml)
- ยฝ pound breakfast sausage (250g)
- 1 bell pepper, chopped
- 1 ยฝ cups cremini mushrooms, sliced (150g)
- ยฝ teaspoon cayenne pepper (1g)
- 1 teaspoon salt (6g)
- 1 cup shredded mozzarella cheese (225g)
- 1 cup shredded gruyere cheese (118g)

How to Make a Bagel Breakfast Casserole with Sausage

If cooking immediately, preheat the oven to 350ยฐF/180ยฐC. Then, spray the baking dish with non-stick spray. If not baking yet, just prepare the pan and set it aside.
Now, you will begin cooking the vegetables in a large skillet. Heat the olive oil over medium heat with the mushrooms and bell peppers. Cook, stirring regularly, for 10 minutes, until the vegetables are softened.
Then, add the sausage, removed it from the casing, and cook the mixture for another 8 to 10 minutes. Stir the mixture regularly and break up the sausage as it cooks.
Once the sausage is cooked through, add the cayenne pepper and taste. If desired, add salt at this point.
Now, cut the bagels into small pieces around 1" to 1 ยฝ" in size. Then add these to a large bowl along with the vegetables, sausage, and the1 cup of shredded or cubed gruyere. Stir this mixture together to combine evenly.
Pour the bagel and meat mixture into the baking dish you prepared earlier, and spread evenly.
Then, whisk the eggs, milk, and salt together in a large bowl, and pour it over the bagel and meat mixture. Push down the bagels so all are covered with eggs. Then, cover the baking dish with aluminum foil and refrigerate overnight, or until ready to bake. If not making it the next day, I recommend letting it sit for 30 minutes to soak before baking.
The next morning, preheat the oven to 350ยฐF/180ยฐC and let the pan sit at room temperature for 15 to 20 minutes before putting it into the oven, covered, for 45 minutes.
After 45 minutes, remove the casserole from the oven and sprinkle the top with the shredded mozzarella, then put it back into the oven, uncovered, and cook for another 25 minutes or until the egg is cooked through.
Serve hot with salsa or hot sauce if desired.

Instructions
- Spray a 9"x13" baking dish with non-stick spray. Set this aside.

- To the skillet of vegetables, add the breakfast sausage, removed it from the casings, and cook for another 8 to 10 minutes. Stir regularly breaking up the sausage as it cooks.
- Add in cayenne pepper and taste. If needed, add salt to taste.
- While this is cooking, cut the bagels into pieces (1" to 1 ยฝ").
- In a large bowl, add the bagel pieces, the cooked vegetables, and the sausage, along with the gruyere. Stir this together until combined.
- Pour this into the prepared baking dish.
- In a medium bowl, add the eggs, milk, and salt, whisking until combined.
- Pour the egg mixture over the bagel mixture, making sure all bagels are beneath the eggs and wet.
- Cover with aluminum foil, and refrigerate overnight.
- When ready to cook the casserole to serve, preheat the oven to 350°F/180°C.
- Once heated, bake, covered, for 45 minutes. Then remove the foil from the top, add the shredded mozzarella, then continue baking for another 25 minutes or until the egg is cooked through.
Notes
Replace the sausage with cooked bacon or ham if desired.
