- ½ cup panko breadcrumbs
- 1 green squash sliced into circles
- 1 zucchini sliced into circles
- ½ red onion chopped
- ½ bell pepper chopped
- 2 garlic cloves minced
- ¼ cup mayonnaise
- 2 eggs
- ½ cup cheddar finely sliced or shredded

- Preheat the oven to 190C/375F.
- Heat up 2-3 tablespoon of olive oil in a large pan placed over the medium heat. Add bell peppers and onions into the pan, cook for 10 minutes. Mix in garlic and cook for 1 minute.
