- 1 tablespoon vegetable oil (15ml)
- 3 pounds boneless skinless chicken thighs, cut into pieces (750g)

- 3 ยฝ cups cooked rice (700g uncooked)
- 12 ounces stir-fried vegetable mix (340g)
- โ cups pineapple chunks (150g)
- 1 chili pepper, sliced
Note: This is a great time to use a frozen bag of stir fry mixed vegetables. You can, however, add in about 1 ยฝ to 2 cups total of any vegetables you prefer. Common options include snow peas, broccoli, carrots, water chestnuts, celery, or zucchini.

Rice can be made in a rice cooker or on the stovetop. If you are in a hurry, you can even use pre-cooked packaged rice for this recipe. I would not recommend using Minute Rice for this as it would result in a mushy casserole.
How to Make a Teriyaki Chicken Casserole

Start by cooking the rice as you normally would, then pour into a large bowl and set it aside. Then, preheat the oven to 375ยฐF/190ยฐC. Next, you will spray the baking dish with non-stick spray or grease well with butter. I used a 9"x13" baking dish, but a 10" oval pan would work also.
In a large skillet, add the vegetable oil and heat it over medium heat. Add in the chopped chicken, and cook for 8 to 10 minutes. Stir while cooking to get all sides cooked evenly.
Once the chicken has been cooked through, add in the seasonings. Fresh ginger and garlic are added, and salt and pepper if desired. Then, stir in the vegetables and pineapple chunks. Stir this and cook for another 5 minutes to heat everything through.
Then, stir in the teriyaki sauce and rice and mix until combined. Make sure everything has combined well so the rice has soaked up the sauce nicely.
Spread this into a prepared baking dish, and then bake for 10 to 15 minutes until it is heated through.
This is best served with some freshly chopped green onions on top and a sprinkle of sesame seeds or furikake before serving.

I have also seen teriyaki sauce made with part soy sauce and part tamari. Alternatively, you can use some pineapple juice in place of brown sugar.
How Long is Teriyaki Chicken Good For?
This dish will last in the fridge for 3-4 days. Reheat it in the microwave or on the stove until hot. You can also freeze it for up to 2 months. Let it thaw overnight in the fridge before reheating.
If the rice seems too dry when you go to reheat it, you can add a bit of additional broth or sauce while you reheat.
