For the grits
- 1 ยฝ cups old-fashioned grits (255g)
- 6 cups of water (1 liter + 500ml)
- 3 tablespoons butter (42g)
- 1 cup shredded cheddar cheese (113g)
- 1 teaspoon salt (6g)
- 1 teaspoon black pepper (3g)
For the meat and eggs
- 1 tablespoon olive oil
- 1 medium white onion
- 1 pound ground beef (500g)
- 1 teaspoon paprika (6g)
- ยฝ teaspoon black pepper (1.5g)
- 1 ยฝ teaspoon salt (9g)
- 10 large eggs
- ยฝ cup milk (60ml)
- 1 cup shredded cheddar cheese (113g)

How to Make Grits Casserole
You will begin by making your grits. This will then be added to a meat and egg mixture before baking. Grits require your attention while they cook, so I recommend making them first before you begin any other steps.
Bring the 6 cups of water to a boil over medium heat then add in the grits, and cook them, stirring constantly for 10 to 12 minutes. They will thicken and most of the moisture will be absorbed into the grits so it is a thick porridge-like texture.
Once they are cooked and thickened, season with salt and black pepper, then stir in the butter and 1 cup of the already shredded cheddar until it is melted. Now, set this aside to prepare the rest of the casserole filling.
Preheat the oven to 350ยฐF/180ยฐC and spray a 9"x13" baking dish with non-stick spray then set it aside.
In a large skillet, you will heat the olive oil over medium heat then add in the onions and cook them, stirring regularly, for 4 to 5 minutes, or until they are tender and starting to get some color.
Add the ground meat to the skillet, and then season it with ยฝ of the salt and ยฝ of the black pepper you set aside for this part of the recipe. Then stir in the paprika.
While the meat is cooking, whisk the eggs, salt, black pepper, and milk together in a large bowl and set them aside.
When the meat is done cooking, pour the whisked eggs into the skillet and stir to combine then cook for another 3 to 4 minutes, until the eggs are mostly cooked through, scrambled, and mixed into the meat well.
