Ingredients
  

  • 3 tablespoon olive oil
  • 3 garlic cloves minced
  • 1 medium white onion chopped
  • ¼ cup sliced scallions
  • 150 g camolino rice
  • 90 ml 3 oz dry white wine
  • ½ cup cream
  • 2 cups chicken stock
  • 400 g 14 oz de-shelled mussels
  • zest of 1 lemon
  • juice ½ lemon
  • salt and pepper

Instructions
 

  • Preheat the oven to 160C/350F.
  • In a large pan heat up olive oil and saute onions for 5 minutes. Add scallions, mussels and white wine, then cook for 1 minute more. Add in garlic, then stir in rice, let it heat though.
