  • 2 cups cherry tomatoes sliced in half
  • ½ cup red onions diced
  • 3 garlic cloves minced
  • 1 cup low-moisture mozzarella shredded
  • 1 cup fresh mozzarella balls sliced in half
  • 1 cup canned tomatoes pureed

Instructions
 

  • Preheat the oven to 200C/400F.
  • Place cast iron skillet on a medium heat and pour in a couple tablespoons of olive oil. Saute onions in olive oil for 5 minutes. Add garlic and tomatoes, cook for 2-3 minutes more.
