Place cast iron skillet on a medium heat and pour in a couple tablespoons of olive oil. Saute onions in olive oil for 5 minutes. Add garlic and tomatoes, cook for 2-3 minutes more.
Combine tomato sauce with cooked quinoa and mix well. Adjust seasoning to your liking.
Transfer quinoa into a casserole dish and top with low moisture mozzarella, fresh mozzarella and fresh tomatoes.
Bake for 20 minutes, serve topped with basil leaves and balsamic glaze.
