Ingredients
  

For the filling

  • 500 g small chicken filets
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium white onion chopped
  • 3 garlic cloves minced
  • 1 cup canned corn
  • 3 tablespoon flour
  • 1 cup chicken stock
  • 1 cup BBQ sauce
  • 1 ½ cups white cheddar cheese shredded
  • salt and pepper

For the batter

  • 1 cup corn flour
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 cup buttermilk
  • 1 egg
  • 3 tablespoon butter melted
  • 2 tablespoon sugar

For serving

  • sliced jalapenos

Instructions
 

  • Preheat the oven to 190C/375F.
  • Melt butter with olive oil on a medium-high heat. Brown chicken filets on both sides, seasoning with salt and pepper. Chop pieces when slightly cooled down.

  • Saute onion and corn for 5 minutes, mix in garlic, cook for 30 seconds, stir in flour and cook for 1 minute. Pour in chicken stock and cook the sauce for 2-3 minutes. Whisk in BBQ sauce, chicken and cheese. Transfer into the baking pan.
