Ingredients
- 1 large carrot, cut into cubes
- 1 medium white onion, chopped
- 1 pound boneless skinless chicken thighs, chopped (500g)
- 1 medium apple, peeled and chopped
- 2 large potatoes, peeled and chopped
- 3 tablespoons vegetable oil (45ml)
- 1 block yaki curry roux (90g)
- 3 cups water (750ml)
- 2 cups cooked rice (500g cooked)
- 1 ยฝ cups shredded mozzarella cheese (337g)
Note: If you can't find it in your local market, you can make homemade curry roux from scratch. If not, you can also use a simple curry paste in this dish instead.

How to Make Yaki Curry Casserole

For this recipe, you will need to have 2 cups of cooked rice prepared. I recommend starting the process by setting this up in your rice cooker or preparing it on the stovetop. While this is cooking, you will assemble the rest of your curry.
Now, in a large and deep skillet or a Dutch oven, heat the vegetable oil over medium heat. To the hot pan, add the carrots and onions and cook them until soft. Stir regularly for 8 to 10 minutes.
Next, you will layer the mixture by adding chicken, then potatoes, then apples. On top of this, place the curry roux or paste. Then, pour 3 cups of water into the pan. Bring this mixture to a simmer and cook on medium-low heat for 30 minutes, stirring it regularly.
Then preheat the oven to 350ยฐF/190ยฐC and spray a baking dish with non-stick spray.
To prepare the casserole for baking, spread the rice over the bottom of the pan and top it with the curry and sauce. Spread it out so the rice is covered.
Then top this with the shredded cheese.
Bake for 15 minutes until the cheese has melted, is bubbly, and golden brown!

If you are afraid it will be a bit too soft, you can par-cook the rice and let it finish cooking in the oven with the curry sauce.
What Can I Use In Place of Curry Paste?
If you do not have curry paste on hand, you can use a combination of garam masala, turmeric, cumin, and chili powder. This will give you a curry flavor without the curry paste.
Not a fan of curry but still love the casserole? You can substitute the curry paste for tomato paste or even just leave it out entirely. The casserole will still be packed with flavor thanks to the other ingredients.
How Long is Homemade Curry Good For?
