How to Make Ham Pineapple Casserole
Video Recipe:
Begin first by preparing your pineapple, ham, and cheese. You'll want to dice, cube, or shred as indicated so that it's easy to grab and go when you begin assembling everything.
Once everything is prepared and measured out, you will then start by preheating the oven to 350ยฐF/190ยฐC. I also like to spray the baking dish I am using with non-stick spray or grease well with butter. This helps make cleanup easier. For this bake, a 9"x 13" or a 10" oval pan is ideal.
Now, mix together the flour, baking powder, salt, garlic powder, onion powder, and dried parsley together in a large bowl.
To this, add the eggs, vegetable oil, and mustard. Stir together until a batter forms, then set it aside. Want a bit more flavor? Use whole grain or Dijon mustard in this step!
In the bottom of the baking dish, spread the ham, pineapple, and cubed cheese. This doesn't have to be exact, nicely spread out so every bite will have a fairly equal amount of ham and cheese once cut and served.
Pour the batter on top of this, then cover with aluminum foil and bake for 45 minutes. I prefer baking on the middle rack so nothing gets too brown or burned on the top or the bottom.
Remove the aluminum foil and sprinkle with the remaining cheese and bake for an additional 5 to 7 minutes until melted and bubbling.
You can also just pop this under the broiler for 2 to 3 minutes to get the cheese golden if you prefer.
Frequently Asked Questions
What is the history of pineapple casserole?
The origin of pineapple casserole is unknown, but it's believed to have been a favorite among homemakers since the 1950s. It was likely popular because it was an easy dish that could be quickly prepared from pantry staples. Over time, variations on the classic recipe emerged, with cooks adding their own ingredients like ham, cream cheese, and marshmallows to the mix.
Today, pineapple casserole remains a beloved side dish that is popular in both the Southern United States and beyond. Its appeal lies in its combination of sweet, savory, and cheesy flavors. Plus, it's an easy way to feed a crowd. This version includes ham making it ideal to serve as an entree.
What cheese goes in ham and pineapple casserole?
The classic cheese for pineapple casserole with ham is sharp cheddar cheese. However, you can use any type of shredded cheese that you like. Monterey jack, Colby jack, or a combination of different cheeses would all be delicious options.
To make the casserole even creamier, add a few spoonfuls of cream cheese along with the shredded cheese. You can also top it with a sprinkle of Parmesan for extra flavor.
How long is pineapple casserole with ham good for?
Ham, pineapple, and cheese casserole will keep for up to three days in the refrigerator. When reheating, make sure that it's heated through before serving.
Can this casserole be frozen?
If you have leftovers or want to make this ahead of time, this pineapple and cheese casserole is good for up to three months in the freezer.
If you'd like to freeze the casserole, first make sure it has cooled completely. Then wrap it tightly with plastic wrap or aluminum foil and place it in an airtight container. Make sure to date and label the container so that you know what it is and can keep it rotated to the front.
Tip: If freezing leftovers, I like to freeze them in individual portion sizes in a quality freezer storage container. This makes it easy to grab a quick lunch for just one person.
