How to Make a Butterscotch Pudding Casserole

Begin by preparing your pan for baking this casserole. I used a 9"x13" baking dish, but a 10" oval dish would also work for this dessert. Spray it with non-stick spray, or grease it well with butter. Set this aside then preheat the oven to 350ยฐF/180ยฐC.
Now, you will begin to make your pudding. This mixture will bake in the oven, so it will be like a thick batter, like a cake. It is not going to be the creamy refrigerated pudding you may be thinking of. So, whisk the flour, salt, and baking powder together in a large bowl.
Then, in a separate bowl, you will whisk together the egg, sugar, and corn syrup. Once the melted butter has cooled a bit, whisk it into the egg mixture. You want to be careful to not put the hot butter right into this or it will scramble the eggs and you will have to start over.
Now you will combine the wet and dry mixtures and stir or whisk until they are smooth and no lumps remain. This will be a thicker batter consistency.
Now, pour this into the baking dish you prepared already and set it aside while you make the crumble topping.
In a small bowl, you will whisk together the brown sugar and cornstarch until it is totally combined. Then, spread this over the top of the casserole in an even layer.
The last step before baking is to bring 2 cups of water to a rolling boil, and then carefully pour that over the casserole. You want this to be hot, but you should also be careful so that you don't get water splash back and burn yourself.
Now, bake for 40 minutes or until set in the center. Let it cool in the baking dish for 5 to 10 minutes before serving to allow it to set up nicely. It will be moist. This can be served hot, at room temperature, or chilled.
