  • 2 bell peppers cored and sliced
  • 1 red onion sliced
  • 3 garlic cloves sliced
  • 6-8 chicken thighs boneless
  • 2 tablespoon white wine vinegar
  • 1 can 400ml/14fl.oz tomato sauce
  • 3 tablespoon tomato paste
  • ½ cup water
  • 2 thyme sprigs
  • 2 oregano sprigs
  • 1 small cauliflower cut into florets
  • ⅔ cup pitted green olives
  • feta cheese chopped parsley for serving
  • olive oil

Instructions
 

  • Preheat the oven to 190C/375F.
  • In a large pan, heat up 3 tablespoon of olive oil and brown chicken thighs on both sides over the very high heat. Remove onto a plate.
