Start by slicing a loaf of vegan bread into 1" cubes. Spread these into the bottom of a greased baking dish then set it aside.
In a large bowl, combine the coconut milk, brown sugar, cornstarch, cinnamon, and starch. Pour this custard over the bread in the baking dish covering all pieces.
In a bowl, combine the butter and flour to create a crumble with pea sized pieces, then sprinkle it on top of the casserole along with the almonds. Bake as directed.
