AMISH BREAKFAST CASSEROLE

A simple recipe with bacon, eggs, hashbrowns, and cheese is easy to make ahead for a fast and delicious breakfast!

INGREDIENTS

Large Radish

– 6 slices bacon – 1 medium onion – 4 cups frozen hash browns (624g) – 8 egg – 1 1/2 cups shredded cheddar cheese (180g) – 1 cup cream cheese (225g) – Salt and black pepper to taste

In a large skillet, cook the bacon and onions as directed.  Drain off grease and add to the hashbrowns with the cream cheese, salt, and black pepper. Stir to combine.

Spread the hashbrown mixture into a prepared baking dish in an even layer.  Then, whisk the eggs until combined, seasoning as desired.

Pour the eggs over the hashbrowns and stir slightly, then cover with shredded cheese.  Bake as directed until the eggs are set and the cheese is golden and melted.

Serve this tasty hashbrown casserole as a hearty breakfast everyone will enjoy.  Add a bit of salsa or hot sauce on top for more flavor!
