Ingredients
  

  • 400 g (14 oz) cauliflower rice
  • 2 tablespoon butter
  • ½ cup cooked bacon chopped
  • 1 garlic clove minced
  • ½ cup sour cream
  • 1 cup cream
  • ½ cup cream cheese

Prawns (Shrimp)

  • 300 g (10 oz) prawns, cleaned
  • salt and pepper
  • 1 lemon zest
  • 1 garlic clove minced
  • olive oil

Instructions
 

  • Preheat the oven to 200C/400F.
  • Melt butter in a medium saucepan placed over medium heat. Cook cauliflower rice for 4-5 minutes. Season cauliflower with some salt and pepper, add cream, garlic, bacon, sour cream, cream and cream cheese. Mix well and bring to a boil, transfer into a casserole dish.

  • Meanwhile combine prawns with olive oil, salt, pepper, lemon zest and garlic. Set aside for 10 minutes.
