In a large pan melt some butter and cook vegetables over medium heat for around 10 minutes. Add garlic, cook for 30 seconds, then put in ground chicken and continue cooking, breaking the meat with a spoon, for 10 minutes or until chicken is fully cooked. Drain the liquid if needed. Season chicken with soy sauce, mix in cream of chicken soup.
