A fun spin on a breakfast quiche, this puff pastry is filled with a delicious bacon, spinach, and egg mixture.
Olive oil, red onion, creamed spinach, salt, pepper, nutmeg, cheddar, eggs, bacon, and puff pastry
In a large skillet, saute the onions until tender, then add in the creamed spinach, salt, pepper, and nutmeg. Cook until heated through and creamy.
Once the mixture is done, you will pour into a bowl and let cool for 5 minutes. Then add the cheddar, bacon, and eggs. Whisk until fully combined.
Cut puff pastry in half and put 1/2 into the baking dish then fill it with the egg and spinach mixture. Top with strips of the remaining pastry and bake.
Add quail egg yolks on top if desired then bake and serve hot. A perfect make ahead breakfast that is ideal for holidays or family brunch!
