Savory and loaded with delicious vegetables and egg, this is a perfect make ahead breakfast or brunch dish!
Butter, mushrooms, garlic, chili flakes, dried thyme, salt, black pepper, stale bread, eggs, yellow and white cheddar, and scallions
Cook down the mushrooms in butter until soft and browned. Add in seasonings and cook until all liquid is gone.
Then, add the bread cubes, 3/4 cup each of white and yellow cheese, the cooked mushrooms, and scallions and stir. Then whisk eggs and milk.
Spread the bread and mushroom mixture into the baking dish then cover with the egg mixture. Make sure all bread is soaked. Add the remaining cheese before baking.
This breakfast bake is a perfect make ahead meal that can be assembled at night and popped into the oven in the morning for a hot and tasty meal.
