Ingredients
  

  • 1 kg (2 pounds) tomatoes, cut into cubes
  • 2 tablespoon olive oil
  • 1 medium white onion chopped
  • 2 garlic cloves minced
  • 2 tablespoon pickled jalapenos chopped
  • 2 cups cheese cracker crumbled
  • 1 cup cream cheese
  • ¼ cup mayonnaise
  • ¾ cup cheddar cheese shredded
  • ¼ cup parmesan
  • 3-4 basil sprigs sliced

Instructions
 

  • Preheat the oven to 190C/375F.
  • Saute onions in some olive oil for around 5 minutes. Mix in garlic and jalapenos, cook for 30 seconds more.

  • In a large bowl mix tomatoes with onions, olive oil, basil, salt and pepper.

  • Combine cream cheese with parmesan, cheddar cheese and mayo.

  • Drizzle 9x13 casserole dish with olive oil, sprinkle 1 cup of cracker crumbs and layer tomato filling on top. Spread cream cheese mixture on top of the tomatoes. Add remaining cup of crackers and bake for 50 minutes.
