  • 1 kg 2 pounds potatoes, peeled and sliced thinly with a mandoline
  • 1 large white onion peeled and sliced thinly with a mandoline
  • ¼ cup olive oil
  • 12 eggs
  • cup milk
  • ½ cup sour cream
  • 3 garlic cloves minced
  • scallions
  • salt and pepper

Instructions
 

  • Preheat the oven to 190C/375F.
  • Heat a large skillet with olive oil over medium heat. Cook potatoes and onions for 10 minutes, stirring carefully from time to time.

  • When potatoes and onions are half-done, mix in garlic and transfer into a large baking pan.

  • Whisk eggs with milk, sour cream, salt and pepper.

  • Pour eggs on top of potatoes, stir carefully to incorporate egg mixture evenly in-between the layers.

  • Bake for 30-40 minutes or until potato slices are fully done and eggs are set completely. Let cool down for 15 minutes before slicing and serving.
