1 kg 2 pounds potatoes, peeled and sliced thinly with a mandoline 1 large white onion peeled and sliced thinly with a mandoline ¼ cup olive oil 12 eggs ⅔ cup milk ½ cup sour cream 3 garlic cloves minced scallions salt and pepper
Preheat the oven to 190C/375F.
Heat a large skillet with olive oil over medium heat. Cook potatoes and onions for 10 minutes, stirring carefully from time to time.

When potatoes and onions are half-done, mix in garlic and transfer into a large baking pan.

Whisk eggs with milk, sour cream, salt and pepper.

Pour eggs on top of potatoes, stir carefully to incorporate egg mixture evenly in-between the layers.
Bake for 30-40 minutes or until potato slices are fully done and eggs are set completely. Let cool down for 15 minutes before slicing and serving.
