500g1 pound italian chicken sausages, casing removed
250g9 oz pasta
200g7 oz oyster mushrooms, chopped
1cupmozzarellashredded
1cupcheddar cheeseshredded
10-12slicessalami
400ml14 oz Italian tomato sauce
Instructions
Preheat the oven to 190C/375F.
Cook pasta in a large pot of salted water for ½ time listed in the instructions. reserve ½ cup pasta water.

Heat up 2 tablespoon of olive oil in a large pan over medium-high heat. Add chicken sausages and cook for 10 minutes, or until brown. Remove to the plate.

In the same pan saute onions with peppers for 5 minutes using residual meat fat. Add mushrooms and cook for 10 minutes. Season with salt, pepper, mix in garlic and fresh oregano. Cook for 1 minute.
½ bell pepper, ½ onion, 2 garlic cloves, 200 g 7 oz oyster mushrooms, chopped, 2 oregano sprigs
Finally add some tomato sauce, half cooked pasta and reserved pasta water. Mix well.
400 ml 14 oz Italian tomato sauce
Transfer pasta and meat into a casserole dish and sprinkle both types of cheese on top. Finish the casserole with salami slices and bake for 25-30 minutes.
