Ingredients
  

  • 400 g 14 oz frozen corn
  • 2 shallots diced
  • 2 garlic cloves minced
  • cup sour cream
  • cup mayonnaise
  • 1 teaspoon chili flakes
  • ½ teaspoon ground cumin
  • 120 g 4 oz cotija cheese
  • cilantro
  • limes
  • olive oil

Instructions
 

  • Preheat the oven to 180C/350F.
  • Heat olive oil in a pan placed over medium heat. Saute shallots for 5 minutes, add garlic and cook for 30 seconds more.

  • Combine garlic and onions with corn and season with salt, pepper, cumin and chili flakes.
