400 g 14 oz frozen corn 2 shallots diced 2 garlic cloves minced ⅔ cup sour cream ⅔ cup mayonnaise 1 teaspoon chili flakes ½ teaspoon ground cumin 120 g 4 oz cotija cheese cilantro limes olive oil
Preheat the oven to 180C/350F.
Heat olive oil in a pan placed over medium heat. Saute shallots for 5 minutes, add garlic and cook for 30 seconds more.

Combine garlic and onions with corn and season with salt, pepper, cumin and chili flakes.

Transfer corn into a large bowl and mix well with sour cream, mayonnaise and cotija cheese.
