Ingredients
  

  • olive oil
  • 400 g 14 oz spicy sausage, sliced into pieces
  • 1 medium white onion diced
  • 2 celery stalks diced
  • 1 bell pepper diced
  • 2 cups chicken stock
  • 2 cups rice
  • 1 teaspoon garlic powder
  • ½ cup ketchup
  • 1 ½ teaspoon cajun spices
  • 1 can 400 g/14 oz tomato sauce
  • cup cheese shredded

Instructions
 

  • Preheat the oven to 190C/375F.
  • Heat olive oil in a large skillet placed over medium heat.
  • Saute onions, celery and carrots for 10 minutes. Stir in sliced sausages and cook for 5-7 minutes more.

  • Add seasonings, tomato ketchup, sauce and rice, stir well to combine and heat through.

  • Transfer rice mixture into a casserole dish, pour boiling hot chicken stock in, stir once more and cover with foil.

  • Bake for approximately 50 minutes. Remove the foil and check if the rice is done.
  • Top with cheese blend and bake for 10 minutes more.
