Ingredients
  

  • 1 kg 2 pounds beef chuck, cut into pieces
  • 1 beef stock cube
  • 2 onions sliced
  • 1 ½ tablespoon all-purpose flour
  • 2 tablespoon tomato paste
  • 1 can tomato sauce 400g/14 oz
  • 1 teaspoon chili flakes
  • 3 garlic cloves minced
  • 1 cup water
  • 1 ½ teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon coriander
  • 1 cinnamon stick
  • 2 bay leaves

Instructions
 

  • Preheat the oven to 190C/375F.
  • Heat olive oil in a cast iron skillet. Brown pieces of beef working in batches. Transfer into a separate plate. Wipe the skillet with paper towels and add some fresh oil.

  • Saute sliced onions for 5-7 minutes. Add tomato paste and cook for 30 seconds more. Add seasonings, stock cube and flour. Put the meat back into the pan.

  • Add tomato sauce and water, bring to a boil. Cover the skillet with foil and bake for 1 hour 30 minutes.
