Ingredients
  

  • 8 flour tortillas
  • 6 eggs
  • 2 cans 600g/20 oz mild salsa
  • 300 g 10 oz cooked black beans
  • 2 ½ cup shredded cheese mexican blend
  • cilantro
  • sliced chilis
  • avocado

Instructions
 

  • Preheat the oven to 200C/400F.
  • Cover the bottom of the casserole dish with 3 tortillas overlapping. Pour ⅓ of the salsa on top and spread out evenly. Top with ½ of black beans and ⅓ of cheese.

  • Cover with another layer of tortillas. Repeat the layering finishing with 3 tortillas. Now spread remaining salsa and cheese on top.

  • Make 6 indents on the surface of the casserole using a spoon. Carefully fill each indent with an egg.
