There’s something magical about the combination of flavors and textures in a well-made Huevos Rancheros Casserole. With its layers of cheese, beans, salsa, and perfectly baked eggs, it's not only delicious but also visually stunning.
Cover the bottom of the casserole dish with 3 tortillas overlapping. Pour ⅓ of the salsa on top and spread out evenly. Top with ½ of black beans and ⅓ of cheese.
8 flour tortillas, 2 cans, 300 g 10 oz cooked black beans, 2 ½ cup shredded cheese
Cover with another layer of tortillas. Repeat the layering finishing with 3 tortillas. Now spread remaining salsa and cheese on top.
Make 6 indents on the surface of the casserole using a spoon. Carefully fill each indent with an egg.

Bake the casserole for 40 minutes. Serve topped with cilantro, chilis and avocado.
