In a large pan heat 2-3 tablespoon of olive oil. Brown meatballs on both sides, leaving them raw in the middle.
500 g 1 pound pre-made meatballs
Remove meatballs onto a plate and cook vegetables in the same pan, scraping any brown bits of meat from the bottom of it. Cook vegetables for 5-7 minutes. Remove from the pan.
400 g 14 oz frozen vegetable mix
Wipe the pan and whisk milk, cream cheese, sour cream and cream of mushroom soup together. Bring to a boil and then combine with meatballs and vegetables.
1 cup milk, ⅓ cup sour cream, ⅓ cup cream cheese, 300 ml 10 oz cream of mushroom soup
Transfer vegetables and meat in the sauce into the baking pan and bake for 30 minutes. Serve topped with crispy fried onions and chopped parsley.
