2 tablespoon olive oil 1 medium white onion chopped 2-3 garlic cloves minced 3 chorizo sausages approx. 150g/5 oz 400 g (14 oz) tomato sauce 1 teaspoon dry italian herbs 400 g (14 oz) fresh gnocchi 120 g (4 oz) mozzarella ½ cup beef stock fresh basil chili flakes for serving
Preheat your oven to broil.
Heat a medium sized cast iron pan over medium heat. Add olive oil and saute onions for 5 minutes. Mix in garlic and Italian herbs.

Add sliced chorizo sausages and cook for 5 minutes. Pour in tomato sauce, season with sugar, salt and pepper. Cook for 10 minutes.

Whisk beef stock and mix in gnocchi. Top with fresh mozzarella and broil for about 5 minutes or until bubbly and the cheese has melted.
